We bring the terroir concept to honey: every harvest and every local area produce a distinctive type of honey. "PROSOPIS ALBA" - honey from the heart of the rainforest The Prosopis Alba honey is a rich clear, bright amber liquid honey. It has a woody aroma of high intensity, suggesting dry grass and spices, and a sweet tasting, of mild astringency and a chocolate aftertaste. This variety is harvested in a selected area of the uncultivated Gran Chaco Forest ("The Impenetrable") in northern Argentina, hundreds of miles far from cities and industries. This area, which expands over 500,000 km² in northern Argentina, is identified as Centre of Plant Diversity by UNESCO. It has hot and humid summers with mild winters and a irregular rainy season from October to April, when floods cover vast areas of the land - up to 15% and for several months. Intense, long-lasting sheet lightning also occurs: the sheer strengths of Mother Nature are perpetually present in the Gran Chaco. The harsh weather and the extreme isolation make this region a difficult place to live: our beehives are located over 250 miles from the nearest city. And because no industrial agriculture is performed, this forest is 100% free from pollution, artificial pesticides, and GM crops. A good, single-hive honey is as distinctive as a chateau-bottled vintage wine.
